With more than a decade of experience, she has taught thousands of clients, patients, and their family members that a diabetes diagnosis doesn’t mean losing what you love — it just means adjustment.
Baked Lemon and Paprika Cod
Cod is a-low fat source of protein, making it a great choice for anyone who wants to reduce their fat intake and improve their heart health.1 Enhanced with a range of spices and zesty lemon, we bring you one of Kim Rose’s favourites recipes for a lunch or dinner-time entree, Baked Lemon and Paprika Cod:
Ingredients for 4 servings
  • 3 fresh cod fillets
  • 2 teaspoons of smoked paprika
  • 1 teaspoon of salt
  • 1 tablespoon of onion powder
  • 1/2 tablespoon of garlic powder
  • 4 teaspoons of ground black pepper
  • 1 large lemon
  • Light extra virgin olive oil cooking spray
  • 1/2 tablespoon of unsalted butter
Dietitian Kim’s tip
Instructions
  1. Preheat oven to 200 degrees C.
  2. Mix smoked paprika, salt, onion powder, garlic powder and ground black pepper in a small mixing bowl or mason jar to create a seasoning blend.
  3. Grease baking dish with butter.
  4. Spray both sides of the fish with extra virgin olive oil and place in baking dish.
  5. Sprinkle the fish with seasoning blend.
  6. Top each fillet with 1-2 slices of lemon.
  7. Bake at 200 degrees C for 15 to 20 minutes.
  8. Optional: Garnish with chopped fresh parsley when ready to serve.

Steamed broccoli, asparagus and green beans are three simple, nutritious, and higher-fibre side dishes that pair well with this recipe. Fibre helps to maintain digestive health, increases satiety, and manages blood glucose spikes.2
