With more than a decade of experience, she has taught thousands of clients, patients, and their family members that a diabetes diagnosis doesn’t mean losing what you love — it just means adjustment.

Breakfast Brunch Bowl with Fried Eggs

In partnership with Kim Rose, we bring you a delicious and nutritious recipe. Packed with fibre-rich fruit and veggies, as well as protein-dense eggs, it can be enjoyed for breakfast, brunch or any time of the day, really. Here’s how to make our Breakfast Brunch Bowl with Fried Eggs:

Ingredients for 4 servings

  • 520 grams of fresh mixed greens
  • 2 tablespoons of light balsamic dressing
  • 130 grams of fresh blueberries
  • 16 cherry tomatoes
  • 640 grams of carrots, shredded
  • 2 medium russet potatoes, previously baked
  • 8 medium to large eggs
  • 2 tablespoons of roughly chopped parsley or coriander (optional)
Dietitian Kim’s tip

Instructions

  1. In a large bowl, mix together the greens, dressing, blueberries, tomatoes and carrots. Set aside.
  2. Slice the potatoes into ¼-inch circles. Heat a pan with avocado oil spray and cook the potatoes for 5 minutes per side over medium heat. Set aside.
  3. Fry the eggs to desired doneness.
  4. Divide the salad mixture between 4 plates. Add the crispy potatoes and two eggs per plate.
Optional: Garnish with parsley or cilantro.

Dietitian Kim’s tip

Depending on your nutrient needs, this recipe is versatile. Consider swapping out russet potatoes for sweet potatoes. The higher fibre content of sweet potatoes may create fewer peaks or spikes in your blood glucose levels.
